Gilson’s was founded in the "Heart of Wilmette" in the summer of 2007 by a couple of Wilmette dads who wanted to come up with a place that would make their wives happy to eat at and give the kids a good meal that didn’t come with a toy. What started as a simple concept of great organic food for the adults and good food for the kids with a ball game on and a beer for the dads quickly morphed into what our customers truly longed for in their neighborhood.

Taking customer feedback and purchase trends, Gilson’s has become the go to place for great American Bistro style food and an extensive wine list.Fresh meats, seafood, organic greens and bread is brought in every day to give customers the best dining experience around.

Gilson’s is a great place to bring the whole family any evening of the week with a fun kid’s menu and a kid friendly staff made up of mostly our friends and neighbors. Then later in the evenings Gilson’s becomes the perfect place for a date night, anniversary or any special occasion with great adult food and wines.

A new dining room was added in the summer of 2010 to overwhelming rave reviews.  You can now dine in the "wine bar" side with a casual feel and the game of the night on the TV or choose the more intimate setting in the new dining room.  Fair warning, the intimate dining room can get pretty lively on the weekends, so be prepared to have a great time!

Due to the response of the community and frequent visitors from outside the village, Gilson’s started taking reservations last year.  This is highly recommended to assure that you have the best experience possible. Gilson’s is also known for the outside seating that creates a great vibe during our wonderful days near the lake shore.

Gilson’s continues to grow and respond to our customers with another big change coming in the Fall of 2012.  The grill will now be open for lunch.For those of you who have been looking for the Gilson Burger or Fish Tacos that you had at dinner, they will now be available on our lunch menu.  The lunch grill will also feature the Bison Burger and Mini Burgers, all with
herb parmesan fries…which will be great news to all the kids.

Everyone at Gilson’s is thrilled with what we have become and the wonderful community support that we have received.  We look forward to many more fun and fulfilling years in our little spot in the Heart of Wilmette!
